Roast Belly of Free-Range Pork

Local Free-Range Pork from Killavullen in County Cork, this joint comes unstuffed but with the bone and crackling on. It is a great slow roast which is full of flavour.

Rub some cooking oil of your preference on the outside of the pork belly. Season with salt, pepper, rosemary and garlic before roasting uncovered in a preheated oven at 210c for 20 minutes.

Then reduce heat to 160c and roast for a further 100 minutes (2lb joint) or 110 minutes (3lb joint).
Leave rest for 10 minutes before carving.
