Description
Rub some cooking oil of your preference on the outside of the pork belly. Season with salt, pepper, rosemary and garlic before roasting uncovered in a preheated oven at 210c for 20 minutes.
Then reduce heat to 160c and roast for a further 100 minutes (2lb joint) or 110 minutes (3lb joint).
Leave rest for 10 minutes before carving.
