Description
Rub some cooking oil of your preference on the outside of the pork loin. Season with salt, pepper, rosemary, and garlic before roasting uncovered in a preheated oven at 210c for 30 minutes. Then reduce heat to 170c and roast for a further 45 minutes (2lb joint) or 60 minutes (3lb joint)
Leave rest for 15 minutes before carving
